Research Experience:
My area of study is Food Microbiology. Within this area, my
research has been directed towards the study of microorganisms associated with
the fermentation of alcoholic beverages, with emphasis on the microbiology of
wine and beer. Also, we are looking for yeast with biocontrol potentials to be
used in the food industry.
To deepen the behavior of these microorganisms, have a line
of yeast genetics pointing to the understanding of evolutionary forces
associated with the microbial ecology of microorganisms found in such
production environments.
